It is time to think about Christmas cookies and one of our family favorites is Potato Chip Cookies. This was part of my mother’s Christmas cookie repertoire for years. The recipe card I have is in her hand writing and brings back such wonderful memories:
Here are the ingredients you will need:
Sugar, flour, butter, egg yolks, pecans, vanilla and, finally, the potato chips. I use the food processor to crush the potato chips. They should have a crumbly consistency:
It took nearly ¾’s of the bag to make 1½ cups of crushed chips.
Cream the butter and sugar, add in the vanilla and the egg yolks. Mix well and then add the flour, followed by the nuts and crushed potato chips.
